Parked the car up when it was raining, didn't drive it for a couple of days.
tried to drive off and the handbrake was well stuck on, had to give it about 2000 rpm to free them off

Yep. You can try to park up with hot brakes, but if it's driving rain, it'll still happen.

I just leave it in gear and don't use the handbrake.
Of course it helps if you don't park on a hill

Also the severity is a bit dependant on your pads but yes they all do that.
I've got Carbon Lorraine RC5+ which are classed as racing pads, never put the handbrake while it sits at home but I've seen them stick after leaving car sitting for a few hours out and about if it is wet
