Speedo and Rev Counter Fogging Up

On the blat up Glencoe last weekend, I noticed on two occassions that the inside of my stack was steaming up
I can't recall having read about this anywhere before.
Any clues as to what is happening?
Other than that the car seems fine except the fluctuating temp readout - anywhere from 70 to 85 when the car is up to temp. I had swaped out blue sensor for this a couple of years ago and cleaned the earth strap but it has returned. Not too bothered about that at the mo',more interested in why it is fogging up. Doesn't do it all the time. Only done it twice so far.

Cheers

Mine fogs up quite often, normally on hot days and the car has been under the shower cpae with the roof on. No idea why.
