Is there anywhere in Aberdeen I can take knives to be professionally sharpened? From kitchen knives to camping knife?

My next door neighbour has done an excellent job for us in the past. He's based in Linlithgow but I'm up in Aberdeen every Tuesday and Saturday so could take them down / up no problem.

If you do call him, tell him you got the info from John at number 16.

DIY. I bought a set of Japanese wet stones and watched the hundreds of YouTube videos on the subject. Techniques vary, but you'll get the idea quickly. I bought a pile of very cheap kitchen knives to practice on before attempting to do any good knives. I messed them all up, so don't start on any knife you care about.

I've promised myself some Japanese custom hand-forged chefs knives when I'm confident I can look after them properly in the traditional way, which isn't yet!

I really enjoy using the stones by feel, but to be honest its for the fun of the craft, and totally unnecessary. It can go wrong quickly, and takes practice, so I would recommend a sharpening system which keeps the blade and stones aligned. You really can't go wrong doing it yourself with an aligned system, and you'll save a lot vs getting it done elsewhere.

Don't forget a really good honing steel, and it's important to get one made of harder than the blade or its not going to work. Match carefully to your blade steel so its just harder, but not too aggressive. For very hard carbon steel knives you may need a ceramic one, but these will destroy cheaper blades.

Far too many tool sharpening places make a total hash of sharpening kitchen knives unless you find on with an old boy who know's what hes doing and uses a water stone or water wheel - oil stones far too course for modern kitchen knifes in my opinion

If you use a sharpening steel to hone your knifes prior to use angle of blade to steel 20' degree's and finish with the last stroke on the opposite side from the hand you write with

My other half hates when I sharpen a kitchen knifes , its usually too sharp for her :roll: with a steel, however, I like the Dimond sharpening blocks with differant grades for chisels. I use it for my axe an leatherman. However for that final finish you cant beat a leather belt :thumbsup
